Phoenicians, Greeks, Romans, Arabs, Normans, Hohenstaufen, French and Spaniards have ruled Sicily over the last three millennia, and all have left their mark on the island's cuisine. Today, it is the immigrants who continue to develop the culinary heritage and contribute new flavours and recipes. Around Agrigento, famous for its temples built by Greek settlers, the local authorities have promoted indigenous varieties by offering farmers free land if they cultivate native varieties. This was a clever move to prevent the land in the Valle dei Templi from becoming scrubland, while at the same time giving more weight to local produce.
