B-EATNorbert Niederkofler has been heading St. Hubertus, a three-star restaurant in St Kassian, South Tyrol, for 20 years. He embodies a cuisine that is in harmony with the rhythm of nature, the environment and its people. His dishes are supposed to tell stories: of mountains, the farmers' and animal breeders' daily efforts, of traditions, of care and consistency. Norbert has influenced numerous chefs of the following generation, many of whom have opened restaurants of their own in South Tyrol.
